Creamy Sausage Gnocchi

Gnocchi pasta mixed with sausage, sun-dried tomatoes and spinach
 1 lb Goolsby's Sausage
 16 oz One Box of Gnocchi
 2 tbsp Extra Virgin Olive Oil
 ½ cup Sun-Dried Tomatoes
 3 Cloves of Garlic
 1 tsp Sage
 1 tsp Italian Seasoning
 1 cup Chicken Stock
 2 cups Chopped Spinach
 3 tbsp Sour Cream, full fat
 2 tbsp Fresh Parmesan Cheese
 Salt and Pepper, to taste

Start by bringing a medium sized pot of salted water to a boil.

Add in the gnocchi and cook according to package instructions or until it floats to the top. Once cooked, strain and set aside.

Meanwhile, chop the spinach and sun-dried tomatoes.

In the same pot, add 2 tbsp of olive oil and then the sun-dried tomatoes.

Saute on medium heat for 2 minutes before adding in the sausage.

Saute till the sausage is no longer pink and is cooked.

Add in the crushed garlic and spices and sauté one minute before adding in the chicken stock, and sour cream.

Add back in the cooked gnocchi and simmer on medium heat all together for 5 minutes.

Toss in the parmesan cheese, stir to coat and serve!
