Goolsby’s Sausage and Zucchini

 10 thawed Goolsby’s Sausage patties
 2 medium zucchini
 3 tbsp soy sauce
 1 tbsp grated ginger
 1 tbsp vegetable oil
 freshly ground black pepper (to taste)
 1 tbsp sambal oelek
 2 tsp toasted sesameseeds

In a small bowl, combine the soy sauce, grated fresh ginger, sambal oelek, and toasted sesame seeds.
Stir all the ingredients together until well mixed.
Set the sauce aside for later use.

Heat a flat-bottomed wok or large frying pan over medium-high heat until a drop of water vaporizes immediately on contact.
Add the Goolsby’s Sausage patties to the pan and season with salt and pepper.
Let the sausage cook undisturbed for 30 seconds, then break it into small, bite-sized pieces.
Continue stir-frying until the sausage is cooked through and golden-brown, about 5 minutes.
Transfer the sausage to a paper towel-lined plate and drain the pan of excess fat.

Cut each zucchini in half lengthwise, then slice each half crosswise into 1/2-inch-thick half-moons.
Drizzle the remaining 1 tablespoon of oil in the pan, add the zucchini, and spread out into one even layer.
Let the zucchini cook undisturbed for 30 seconds.
Stir-fry the zucchini until browned and just tender, about 5 minutes more.

Return the cooked sausage to the skillet.
Add the previously prepared sauce to the pan.
Stir-fry everything together until the sauce is well-incorporated, and the zucchini begins to look glossy, about 30 seconds more.
Serve the dish by itself or with rice, as desired.
