½ lb Goolsby's Sausage (5 patties)
½ Sweet Onion, Finely Diced
3 tbsp Olive Oil
1 lb Sweet Potatoes Peeled, Cut Into 1/2-inch Pieces
1 lb Brussel Sprouts Ends Trimmed, Thinly Sliced
2 Cloves Minced Garlic
2 tbsp Honey
2 tsp Apple Cider Vinegar
1 tsp Sriracha Sauce
1 tsp Salt
8 Mini Flour Tortillas
Optional:
Cilantro

Make the Ragù:
1In a large skillet over medium heat add 2 tablespoons olive oil and onion. Sauté for 2-3 minutes or until onions begin to become slightly translucent.
2In a separate pan, cook the sausage until no longer pink. It will cook thoroughly in the pan with the brussel sprouts and potatoes. Drain excess grease from sausage and set aside.
3Add additional olive oil and sweet potatoes. Sauté for 6-8 minutes.
4Add brussel sprouts and cook for 3-4 minutes covered, or until brussel sprouts are almost tender.
5While vegetables are cooking whisk together garlic, honey, vinegar, sriracha sauce, and salt.
6Add sauce and sausage to skillet, making sure to scrape the bottom of the pan to loosen up any bits. Cook for 2-3 minutes or until potatoes, sprouts, and sausage are completely cooked.
7Serve in a flour tortilla with sriracha, cheese, and cilantro on top. Enjoy!
